3 cups chopped, peeled apples
2 cups sugar
3 cups flour
1 cup canola oil
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
Extra sugar and cinnamon for top of bread
Mix in a large bowl, sugar, oil and eggs.
Add to egg and sugar mixture; flour, baking soda, cinnamon and salt.
Add vanilla and apples. Mix well.
Place into two greased and floured 8 1/2-inch loaf pans.
Put a cinnamon and sugar mixture on top.
Bake in a 325 degree oven for 1 hour.
You may add one cup of raisin or nuts if you desire.
