Homemade Apple Cinnamon Bread

When you bake this apple cinnamon bread your whole house will smell so good with the fragrant of cinnamon and apples baking. You only need sugar, eggs, oil, flour cinnamon, baking soda, salt, vanilla and apples to get a couple of loaves baking.

3 cups chopped, peeled apples
2 cups sugar
3 cups flour
1 cup canola oil
2 teaspoons vanilla
3 eggs
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
Extra sugar and cinnamon for top of bread

Mix in a large bowl, sugar, oil and eggs.
Add to egg and sugar mixture; flour, baking soda, cinnamon and salt. 
Add vanilla and apples. Mix well. 
Place into two greased and floured 8 1/2-inch loaf pans.
Put a cinnamon and sugar mixture on top.
Bake in a 325 degree oven for 1 hour.

You may add one cup of raisin or nuts if you desire.
