Caramel Apple Cheesecake

Who can resist a Caramel Apple Cheesecake. I love the apple and cheesecake combination, it is so yummy. This dessert will make an elegant fall dessert for those special occasions.

Ingredients for Crust:
1 cup shortbread cookies, crushed
1/3 cup margarine, melted
1/2 cup sugar

Ingredients for cheesecake:
2-8 ounce packages, cream cheese, softened
1-21 ounce can apple pie filling
2 eggs
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 cup granulated sugar
1 cup pecans, chopped
Caramel topping, ice cream topping
1/3 cup sugar

Preheat oven to 350 degree.
In a small bowl mix the crumbs, butter and sugar.
Press crumb mixture into the bottom of a 9-inch spring form pan.
Bake for 10 minutes.
Remove from oven; set aside.
Mix in medium bowl, the cream cheese, sugar and vanilla.
Add eggs one at a time; mix well.
Pour into crumb crust.
Mix in a medium bowl, the apples,cinnamon, pecans and sugar.
Spoon apple mixture over cream cheese filling.
Bake in 350 degree oven for 1 hour.
Turn off oven; let the cheesecake remain in oven for five extra minutes.
Remove from oven; let cool.
Refrigerate cheesecake until ready to serve.
Before serving, drizzle with a spoonful of the caramel topping over cheesecake.
