Grilled Dove Breast
Since it is dove season now, I thought I would share this recipe from my brother-in-law Lee. It is a delicious way to prepare dove breast. Be sure you make plenty for everyone because this recipe will be a hit. Quantity of ingredients will depend on how many dove breast you are grilling.
Bacon, cut into thirds
Fresh jalapeño peppers, cut into ¼ inch slices
Fresh onion, sliced
Italian salad dressing
Salt & pepper
Filet dove breast meat off of breast bone.
Marinate breast meat in your favorite Italian dressing for 24 hours.
Slice onion into ¼ inch slices, then cut into lengths equal to the size of the dove breast.
Cut jalapeños in quarters; remove seeds and veins.
Put one piece of meat, ½ pepper and an onion slice together and wrap with a third of a bacon strip.
Use a toothpick to hold together to hold together and grill over flame until bacon is crispy.
