Homemade Buttermilk Biscuits Recipe




What could be better than a pan of Homemade Buttermilk Biscuits. Serve with butter and your favorite jam or jelly. You only need three ingredients to get started on a hot delicious pan of homemade buttermilk
biscuits. Enjoy!

Ingredients:
8 cups all-purpose flour
1/3 cup Crisco shortening
1 cup buttermilk

Directions:
Step 1: Preheat oven to 425 degree.
Step 2: Sift the flour into a large mixing bowl.
Step 3: Make a hole in the middle of the flour; place shortening inside.
Step 4: Add the buttermilk slowly to flour and shortening; stirring with a spoon.
Step 5: Spread your surface well with flour and place dough on it.
Step 6: Divide dough into two pieces.
Step 7: Cover your hands with flour to keep dough from sticking to them.
Step 8: Shape an egg size piece of dough into disks; place 2-inches apart on a baking sheet.
Step 9: Bake at 425 degree for 8 to 10 minutes.
Serve with butter and jam or jelly.
Makes one dozen biscuits.

Jalapeno Cheesy Beer Bread

This delicious spicy cheesy beer bread would be great with any hot soup recipe or with a main dish. Make it as spicy as you like!

Ingredients:
1 3/4 cups all-purpose flour
1 3/4 cups whole wheat flour
3 tablespoons sugar
1 tablespoons baking powder
1 1/2 teaspoon salt
4 ounces Mozzarella cheese, cut into small cubes
2 tablespoons to 1/2 cup jalapeños, finely chopped
1 12-ounce bottle beer
1 egg, lightly beaten, for brushing on bread

Directions:
Step 1: Preheat oven to 375 degrees.
Step 2: In a large bowl, combine the flour, sugar, baking powder and salt.
Step 3: Stir in the cheese and chopped jalapeños, then pour in the beer and stir until just combined, the dough will be stiff and dry.
Step 4: Turn onto a very lightly floured surface and knead for several turns, then shape the bread into a nice ball shape.
Step 5: Place on a greased baking sheet and brush the top with the beaten egg.
Step 6: Bake at 375 degree for 50 minutes to 1 hour. Check the bread with a knife or toothpick to see if it is done. If it comes out clean bake another five minutes.

Step 7: Remove bread from baking sheet and place on a wire rack to cool for several minutes before slicing.

Tips:
You may use any hot pepper of your choice
You can also use other cheese, such as cheddar, I used mozzarella because it is lower in fat.

Deep-Fried Onion Rings


Deep Fried Onions Rings are delicious with just about anything! You could replace the bread crumbs with Panko coating if you like. Maybe double the recipe, I am sure everyone will want seconds of these yummy onion rings.

Ingredients:
1 large onion, cut into 1/4-inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
3/4 cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Directions:
Step 1: Heat the oil in a deep-fryer to 365 degrees.
Step 2: Separate the onion slices into rings, and set aside.
Step 3: In a small bowl, stir together the flour, baking powder and salt.
Step 4: Dip the onion slices into the flour mixture until they are all coated; set aside.
Step 5: Whisk the egg and milk into the flour mixture using a fork.
Step 6: Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up.
Step 7: Spread the bread crumbs out on a plate or shallow dish.
Step 8: Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well.
Step 9: Repeat with remaining rings.
Step 10: Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown.
Step 11: Remove to paper towels to drain. Season with seasoning salt, and serve.

Tips:
Replace bread crumbs with panko coating.

No-Bake Chocolate, Peanut Butter & Oatmeal Cookies


I have made this No-Bake Chocolate, Peanut Butter & Oatmeal Cookie recipe many times. It is easy and quick when you are needing a snack for the kids or a dessert for potluck meal.

Ingredients:
½ cup,1 stick, butter
2 cups granulated sugar
½ cup milk
4 tablespoons cocoa powder
½ cup peanut butter
2 teaspoons vanilla extract
3 cups quick-cooking oats


Directions:
1. Add the butter, sugar, milk and cocoa powder to a 4-quart saucepan.

2. Bring mixture to a rolling boil and let boil for 1 minute.
3. Remove from heat.
4. Stir in the peanut butter and vanilla until smooth, then stir in the oats.
5. Drop by heaping tablespoons onto wax paper.
6. Let cool until set.

Yield: 2 to 3 dozen cookies

Banana Nut Roll Recipe


If you have some over ripe bananas, this is a great recipe to use them in. This delicious moist Banana Nut Roll is filled with a cream cheese filling, it would make a great dessert for any occasion.

Ingredients for Banana Nut Roll
Cake Roll:
3 eggs, beaten on high for 5 minutes
1 cup sugar
2 -3 ripe bananas, mashed
1 tablespoon lemon juice
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 chopped nuts

Cream Cheese Filling:
1 cup powdered sugar
6 ounces light or regular cream cheese
4 tablespoons margarine, softened
1/2 teaspoon vanilla extract


Cream Cheese Icing:
3 ounces cream cheese
1 teaspoon vanilla
2 cups powdered sugar
1-2 Tablespoons milk
Pecans for sprinkling on top if desire

Directions for making Cream Cheese Filling:
Step 1: Mix powdered sugar, light or regular cream cheese, softened margarine and vanilla extract.
Step 2: Chill filling ingredients.

Directions for making cake roll:
Step 1: L
ightly grease 15x10x1 inch jelly roll pan. Line bottom pan with waxed paper, grease the paper. Set aside.
Step 2: Preheat oven to 350 degree.

Step 3: Using an electric mixer, beat eggs for five minutes.
Step 4: Add to beaten eggs; sugar, flour, baking powder, bananas, lemon juice, vanilla extract and salt.
Step 5: Mix well.
Step
6: Spread batter into pan.

Step 7: Sprinkle chopped nuts on top.
Step 8: Bake in 350 degree oven for 15 minutes.
Step 9: Turn out banana nut roll onto a clean dish towel which you have sprinkled with powdered sugar.
Step 10: Peel off wax paper.
Step 11: When cool, spread filling on and roll up.
Step 12: Wrap it up in Plastic Wrap.
Step 13: Place in the refrigerator until ready to serve.


Directions for making Cream Cheese Icing:
Step 1: Beat cream cheese and vanilla together.
Step 2: Add powdered sugar and just enough milk for spreading consistency.

4: Ice the top of the cake and garnish with chopped pecans.

Bacon Wrapped Cream Cheese Jalapeño Poppers

These spicy little poppers make a yummy appetizer. Once you have the first one you just can't get enough of them. Make sure you make plenty, according to the number of partakers you will have for these hot poppers. Make sure you use plastic gloves when working with jalapeño peppers.

Ingredients for Bacon Wrapped Cream Cheese Jalapeño Poppers:
25 fresh jalapeño peppers
14 -16 ounces cream cheese
2-16 ounce packages bacon

Directions for making Bacon Wrapped Cream Cheese Jalapeño Poppers:
Step 1: Place plastic gloves on hands.
Step 2: Wash and cut stems off of peppers.
Step 3: Cut the jalapeño peppers in half lengthwise.
Step 4: Remove all of the seeds from peppers.
Step 5: Fill each pepper with cream cheese, don't be stingy.
Step 6: Cut bacon strip into halves, wrap 1/2 slice of bacon around each pepper half.
Step 7: You may secure bacon with toothpicks if you like, I never do.
Step 8: Place on baking sheets and place in 450 degree oven for 10 to 15 minutes or until bacon is fully cooked.
Makes 50 poppers.

Fresh Peach Dump Cake

 Peach Dump Cake is so easy and delicious. Serve it warm or cold; add a dip of ice cream or whipped cream if you like.

Ingredients needed for cake:
4 to 6 large peaches, peeled, pitted and sliced
1/3  cup water
1 package yellow cake mix
½ cup butter, 1 stick, cut into 16 pieces
3/4 cup brown sugar
1/2 cup chopped walnuts, pecans or almonds.
1/2 cup shredded coconut
Directions for making cake:
Step 1: Preheat oven to 350 degree.
Step 2: Lightly oil a 13-inch x 9-inch pan or dish.
Step 3: Layer ingredients into pan in order given starting with peaches.
Step 4: Bake for about 40 minutes.

Serve warm or cold.

Perfect Fried Eggplant

This is a recipe for Perfect Fried Eggplant. A yummy way to prepare a side for just about any meal. Hope you enjoy.

Ingredients:
1medium eggplant, about 1 pound
2 eggs, beaten
1 teaspoon salt
Dash black pepper
1 cup packaged dry bread crumbs
2 tablespoons Parmesan cheese, grated
Canola oil for frying
Salt

Directions:
Step 1: In a shallow dish, mix eggs, salt, and black pepper.
Step 2: Combine crumbs and cheese on waxed paper.
Step 3: Slice unpeeled eggplant, crosswise, into 1/8-inch thick rounds.
Step 4: Dip slices into egg, then in crumb mixture, make sure you coat them completely.
Step 5: In a large, heavy skillet, slowly heat Canola oil at least 1/4-inch deep.
Step 6: Fry eggplant until golden brown, about 3 minutes on each side.
Step 7: Drain on paper towels, sprinkle lightly with salt.
Make 4 servings.

Guacamole and Tomato Salad
















 This is a great summer salad for a brunch, get together or just for the family. It goes well with any meat and sides.

Ingredients needed:
6 medium tomatoes
Salt
½ cup onion,finely chopped
2-4 ounce can green chiles, finely chopped, may just use one can if you desire
2 teaspoons lemon juice
2 medium avocados, very ripe
3 slices bacon, crisp cooked and crumbled
Crisp lettuce

Directions for making:
Step 1: Cut ½-inch thick slice from stem end of each tomato.
Step 2: Scoop out tomato centers, and chop finely.
Step 3: Sprinkle the insides of tomato cups lightly with salt, turn upside down on paper towels, to drain.
Step 4: Refrigerate.
Step 5: Stir chopped onion and chiles, lemon juice and 1 ½ teaspoon salt into chopped tomato.
Step 6: Cover and refrigerate tomato onion mixture.
Step 7: Just before serving, peel and pit avocados, mash.
Step 8: Stir in chopped tomato onion mixture.
Step 9: Spoon guacamole into tomato cups; top with crumbled bacon.
Step 10: Arrange tomatoes on lettuce leaves on a serving platter.
Step 11: Pass any leftover guacamole.
Makes 6 servings.

Home Canned Jalapeno Peppers

This is a delicious recipe for home canning your jalapeño peppers. It is very easy and you have a delicious product when you are finished. You may slice the jalapeños are leave them whole. Hope you enjoy.

Ingredients:
1 3/4 quart jalapeño peppers
1 large onion
5 carrots, sliced
2 tablespoons Mazola oil
4 bay leaves, crumbled
1 teaspoon salt
1 teaspoon sesame seeds
Vinegar to cover

Directions:
Cover peppers, onion, carrots, oil and bay leaves with vinegar. 
Bring to a boil.
Pack in jars and add 1 teaspoon salt and 1 teaspoon sesame seeds to each quart jar.
Cover peppers with liquid and seal lids on the jar while hot.
Let set at least two weeks before eating.

Grilled Parmesan Tomatoes Recipe

This recipe for Grilled Parmesan Tomatoes will be a way to use your abundance of tomatoes this summer. These tomatoes are delicious served as a side to just about any meal. Hope you enjoy.

Ingredients:
6 medium tomatoes, halved cross-wise
¼ cup Dijon mustard
½ teaspoon sea salt
½ cup Italian seasoned bread crumbs
1 3-ounce package Parmesan cheese, shredded
1 teaspoon dried parsley flakes
1 teaspoon ground red pepper
¼ cup butter, melted
1 jalapeño, seeded and chopped
1 tablespoon mayonnaise
1 teaspoon fresh basil, chopped
½ teaspoon Hungarian paprika
2 cloves garlic, finely chopped

Directions:
Step 1: Mix all ingredients except tomatoes.
Step 2: Spread mixture evenly over tomato halves.
Step 3: Grill over medium heat until tomato is soft and topping is brown, about 10 minutes.

Tips:
This recipe may also be done under the broiler in your oven.

Asparagus Stir Fry




I love asparagus and it is at an affordable price in the supermarket right now. I have been getting my fill of this delicious vegetable. There are many recipe for asparagus but my favorite way to fix it is stir fry, it is quick, easy and yummy.

Ingredients:
1 pound asparagus
4 teaspoon olive oil
Sea salt
1 garlic clove, minced

Directions:
Step 1: Prepare asparagus by rinsing under warm water. Discard woody end of asparagus.
Step 2: The asparagas will break off the woody part if you give a gentle bend on the end of it.
Step 3: Get a large skillet heated on medium high.
Step 4: Add olive oil.
Step 5: Place asparagus and garlic in skillet tossing to coat with oil. Cook about 3 minutes until crisp-tender and browned.
Step 6: Sprinkle with sea salt and toss.

Serve immediately.

Easy Blackberry Cobbler



I love Blackberry Cobbler and a dip of vanilla ice cream just about any time of the year. This recipe is easy to put together in no time for a delicious comfort dessert.

Ingredients:
1 quart blackberries
Sugar to taste, about 1 cup
2 tablespoons cornstarch
2 tablespoons water
¼ cup butter
1 ½ cups flour
1 cup sugar
1 ½ teaspoons baking powder
7/8 cup milk

Directions for making:
Step 1: Combine berries, sugar to taste and cornstarch dissolved in water in a saucepan; bring to boiling and cook, stirring for 5 minutes. Set aside.
Step 2: Melt butter in a 15 x 10 x 1-inch pan.
Step 3: Combine in a medium bowl; flour, sugar, and baking powder; stir in milk.
Step 4: Pour batter over melted butter.
Step 5: Spoon berries over batter and bake at 350 degree for 35 to minutes.

Serve with a dip of vanilla ice cream or a dollop of cool whip.

Crescent Rolls Beef Foldover Appetizers


Crescent Rolls Beef Foldover are a delicious appetizers for your next party or get together. They are quick and easy to assemble and you will be enjoying them within 30 to 45 minutes from start to finish.

Ingredients needed to make Crescent Rolls Beef Foldover:
2-cans crescent rolls
1 pound ground beef
4 slices cheese, Cheddar or American
Barbecue sauce
Salt and pepper to taste

Directions for making Crescent Rolls Beef Foldover:
Step 1: Brown meat in medium size skillet and season with salt and pepper; drain well.
Step 2: Add barbecue sauce to meat.
Step 3: Roll out crescent rolls, but keep in squares.
Step 4: Place about 2 tablespoons meat mixture in the middle of each square.
Step 5: Place a cheese slice over the meat.
Step 6: Fold the crescent roll over the meat and cheese mixture.
Step 7: Seal the edge of the roll with the tines of a fork.
Step 8: Place sealed crescent rolls on a baking dish.
Step 9: Bake at 375 degree for 15 to 20 minutes.

Sydney's Southern Bacon Stuffed Deviled Eggs

My granddaughter Sydney loves Southern Bacon Stuffed Deviled Eggs. She is 11 years old and she make this recipe often for a family meal at Grannie and Grampa's house. This is a quick side to serve with just about any meal. Makes a great appetizers too.

Directions for making Southern Bacon Stuffed Deviled Eggs:

7 large eggs, hard boiled and peeled

1/4 cup mayonnaise


1 1/2 tablespoons sweet pickle or dill relish


½ teaspoon prepared mustard


Salt and pepper, to taste


Paprika, for garnishing


4 slices bacon, crisp fried, crumbled

Directions for making Southern Bacon Stuffed Deviled Eggs:

Cover eggs with water in large sauce pan.

Boil for 10 minutes, remove from heat; cover with lid and let sit 15 minutes.


Drain water from eggs and run cold water over eggs to cool.
Peel eggs; halve eggs lengthwise.


Place egg yolks in a small bowl and egg whites on serving plate.


Fill egg whites with the egg yolk mixture.

Mash yolks with a fork; add mayonnaise, pickle relish and mustard; mix well.

Add salt and pepper, to taste; gently stir in crumbled bacon.

 
Sprinkle top of eggs with paprika.


Cover and place in refrigerator until serving time.

Green Chili Stew


This delicious Mexican Green Chili Stew is made with a Boston butt pork roast, onions, green chilies, tomatoes hominy cilantro chili power, cumin and other seasonings. Green Chili Stew is good served with a green salad and warm tortillas or Mexican Cornbread.

Ingredients needed to make Green Chili Stew:
2 pounds cubed Boston butt pork
1 cup onions, chopped
4 tablespoons vegetable oil
2 tablespoons chili powder
2 tablespoons cumin, ground
2-7-ounce cans chopped green chilies
1-14.4-ounce diced tomatoes
2 cups beef broth
1-30-ounce can golden hominy
Cilantro
Salt and pepper to taste
Flour

Directions for making Green Chili Stew:
Step 1: Dust pork cubes in flour.
Step 2: In a large pan brown onions and pork cubes in vegetable oil.
Step 3: Add chili powder, cumin, salt and pepper.
Step 4: Add green chilies, diced tomatoes and beef broth.
Step 5: Bring mixture to a boil and let simmer over low heat for 45 minutes.
Step 6: Add hominy and cilantro and cook for 15 minutes.
This recipe serves 6.

Sugar Snap and English Pea Surprise Salad

This is a twist on pea salad. You use sugar snap peas and small English peas to make a delicious salad. It is chocked full of cashews, cauliflower celery and red onions and brought together with sour cream and salad dressing. It is topped off with a a garnish of crumbled crisp bacon.

Ingredients.
1-10 ounce package frozen sugar snap peas
1-10 ounce package frozen small english peas, thawed
1 cup cashews
1 cup cauliflower, chopped
1 cup salad dressing
1/3 cup sour cream
1/3 cup red onion, diced
1/3 cup celery, dices
¼ cup crisp bacon, crumbled

Directions:
Cook the sugar snap peas for 2 minutes.
Mix together in a large bowl, sugar snap peas, small peas, cashews, cauliflower, salad dressing, sour cream and celery.
Chill mixture for at least 2 hours.
Garnish with bacon.
Serves 6.

Upside-Down Pizza


This recipe is a different twist on pizza. It is easy to assemble and the family with love it. Add a tossed salad and you will have a easy week-night meal.

Ingredients needed:
1 pound bulk Italian sausage
1 medium onion, chopped
½ cup green pepper, chopped
1 cup plus 2 tablespoons all-purpose flour, divided
1 teaspoon Italian seasoning or oregano
1-15 ounce can tomato sauce
2 cups mozzarella cheese, shredded
2 eggs
1 tablespoon vegetable oil
1 cup milk
½ teaspoon salt
2 tablespoons Parmesan cheese, grated

Directions for making:
Preheat oven to 425 degree.
In a saucepan, cook the sausage, onion and green pepper over medium heat until meat is no longer pink; drain.
Stir in 2 tablespoon flour and Italian seasonings; mix well.
Add tomato sauce.
Bring mixture to a boil; cook and stir for 2 minutes.
Place mixture in an ungreased 9x13x2-inch baking dish
Sprinkle with mozzarella cheese.
Place remaining flour in a mixing bowl.
Beat in the eggs, oil, milk and salt until smooth.
Stir in Parmesan cheese.
Pour over casserole.
Bake uncovered, at 425 degree for 25 to 30 minutes or until browned.
