I love Blackberry Cobbler and a dip of vanilla ice cream just about any time of the year. This recipe is easy to put together in no time for a delicious comfort dessert.
1 quart blackberries
Sugar to taste, about 1 cup
2 tablespoons cornstarch
2 tablespoons water
¼ cup butter
1 ½ cups flour
1 cup sugar
1 ½ teaspoons baking powder
7/8 cup milk
Directions for making:
Step 1: Combine berries, sugar to taste and cornstarch dissolved in water in a saucepan; bring to boiling and cook, stirring for 5 minutes. Set aside.
Step 2: Melt butter in a 15 x 10 x 1-inch pan.
Step 3: Combine in a medium bowl; flour, sugar, and baking powder; stir in milk.
Step 4: Pour batter over melted butter.
Step 5: Spoon berries over batter and bake at 350 degree for 35 to minutes.
Serve with a dip of vanilla ice cream or a dollop of cool whip.
