This recipe for Grilled Parmesan Tomatoes will be a way to use your abundance of tomatoes this summer. These tomatoes are delicious served as a side to just about any meal. Hope you enjoy.
6 medium tomatoes, halved cross-wise
¼ cup Dijon mustard
½ teaspoon sea salt
½ cup Italian seasoned bread crumbs
1 3-ounce package Parmesan cheese, shredded
1 teaspoon dried parsley flakes
1 teaspoon ground red pepper
¼ cup butter, melted
1 jalapeño, seeded and chopped
1 tablespoon mayonnaise
1 teaspoon fresh basil, chopped
½ teaspoon Hungarian paprika
2 cloves garlic, finely chopped
Step 1: Mix all ingredients except tomatoes.
Step 2: Spread mixture evenly over tomato halves.
Step 3: Grill over medium heat until tomato is soft and topping is brown, about 10 minutes.
This recipe may also be done under the broiler in your oven.
