Perfect Fried Eggplant

This is a recipe for Perfect Fried Eggplant. A yummy way to prepare a side for just about any meal. Hope you enjoy.


  • 1medium eggplant, about 1 pound
  • 2 eggs, beaten
  • 1 teaspoon salt
  • Dash black pepper
  • 1 cup packaged dry bread crumbs
  • 2 tablespoons Parmesan cheese, grated
  • Canola oil for frying
  • Salt


Step 1: In a shallow dish, mix eggs, salt, and black pepper.
Step 2: Combine crumbs and cheese on waxed paper.
Step 3: Slice unpeeled eggplant, crosswise, into 1/8-inch thick rounds.
Step 4: Dip slices into egg, then in crumb mixture, make sure you coat them completely.
Step 5: In a large, heavy skillet, slowly heat Canola oil at least 1/4-inch deep.
Step 6: Fry eggplant until golden brown, about 3 minutes on each side.
Step 7: Drain on paper towels sprinkle lightly with salt.
Make 4 servings.
