3 eggs, beaten on high for 5 minutes
1 cup sugar
2 -3 ripe bananas, mashed
1 tablespoon lemon juice
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 chopped nuts
Cream Cheese Filling:
1 cup powdered sugar
6 ounces light or regular cream cheese
4 tablespoons margarine, softened
1/2 teaspoon vanilla extract
1 teaspoon vanilla
2 cups powdered sugar
1-2 Tablespoons milk
Pecans for sprinkling on top if desire
Directions for making Cream Cheese Filling:
Step 1: Mix powdered sugar, light or regular cream cheese, softened margarine and vanilla extract.
Step 2: Chill filling ingredients.
Directions for making cake roll:
Step 1: Lightly grease 15x10x1 inch jelly roll pan. Line bottom pan with waxed paper, grease the paper. Set aside.
Step 2: Preheat oven to 350 degree.
Step 3: Using an electric mixer, beat eggs for five minutes.
Step 4: Add to beaten eggs; sugar, flour, baking powder, bananas, lemon juice, vanilla extract and salt.
Step 5: Mix well. Step
6: Spread batter into pan.
Step 7: Sprinkle chopped nuts on top.
Step 8: Bake in 350 degree oven for 15 minutes.
Step 9: Turn out banana nut roll onto a clean dish towel which you have sprinkled with powdered sugar.
Step 10: Peel off wax paper.
Step 11: When cool, spread filling on and roll up.
Step 12: Wrap it up in Plastic Wrap.
Step 13: Place in the refrigerator until ready to serve.
Step 2: Add powdered sugar and just enough milk for spreading consistency.
Step 3: Add a dash of salt. Step
4: Ice the top of the cake and garnish with chopped pecans.
