Crockpot Cornbread Dressing

Crockpot Cornbread Dressing is a great recipe to use over the Thanksgiving holidays when the oven is busy with the turkey and other favorite dishes you bake in the oven. Instead, you can use your Crockpot or slow cooker for your dressing. Thanks for cookin' with Grannie!

Now dig in the cupboard and find your 6-quart Crockpot or slow cooker.

Here are the ingredients you need to get going:

6 cups cornbread, crumbled
8 slices bread, day old (leave out overnight uncovered in a pan), crumbled
4 eggs 1 large onion, diced
1 cup celery, diced
1 tablespoon sage or poultry seasoning
½ teaspoon black pepper
2- 10 ½ ounce cans cream chicken soup
2- 10 ½ ounce cans chicken broth
¼ cup butter Salt to taste

Now we are ready to get it mixed.

In a large bowl, add the cornbread and regular bread, eggs, onion, celery, sage or poultry seasoning, black pepper, soup, chicken broth and salt; mix well.

Chocolate Poke Cake Recipe

Chocolate Poke Cake is made with a chocolate cake mix, instant chocolate pudding and cool whip. It is so moist and yummy with the pudding dripping through the cake.

Ingredients needed:

1 box chocolate cake mix ( I used devil food cake)
2- 3-ounce boxes chocolate pudding mix
1-8-ounce Cool Whip

Directions:

Bake cake according to the box, except I doubled the oil amount, this makes the cake more moist.

When cake is done, let cool a few minutes, using the handle of a wooden spoon poke holes all over the cake, make sure you poke all the way to the bottom.

Mix the pudding mix with 3 ½ cups milk, you can use 4 cups like it calls for if your like. I just like my pudding thicker!

Pour pudding mix all over cake so it cover all the holes well.

Cover with plastic wrap and place in refrigerator for a couple of hours.

Before serving cover the cake with the cool whip or you could use whipped cream if you like.

Also looks great with shaved chocolate on top!

Cousin Ruth's Homemade Biscuits State Fair Recipe

Cousin Ruth's State Fair Homemade Biscuit Recipe

My cousin Ruth made these biscuits from the Demo Kitchen inside the Creative Arts Building just north east of the Cotton Bowl in Dallas, Texas. She made 200 plus biscuits a day during the State Fair of Texas for eight years. You must give this award winning biscuits a try. Enjoy!

Ingredients:
2 cups all-purpose flour
¾ cups milk
1 teaspoon salt
¼ cup shortening

Variations:
Bacon:
¼ cup crumbled, add to milk

Cheese:
½ cup shredded sharp cheddar, add to milk

Herb:
Add the following to the flour mixture:
1 ¼ teaspoon caraway seeds
½ teaspoon crumbled leaf sage
¼ teaspoon dry mustard

Buttermilk Biscuits:
If you use buttermilk instead of milk it will be necessary to decrease the baking powder to two teaspoons; and add ½ teaspoon baking soda. Also, you need to increase the buttermilk to one cup.

Note: If using self-rising flour omit baking powder and salt.

Heat oven to 450 degree.
Measure flour, baking powder and salt into large bowl.
Cut in shortening until it has the texture of corn meal.
Stir in milk.
If dough is not pliable, add enough milk to make soft, puffy easy-to-roll dough. Too much milk makes the dough sticky, not enough makes biscuits dry.
Place dough on floured board and knead lightly.
Cut biscuits.
Place on ungreased baking sheet.
Bake until golden brown, 12 to 15 minutes.

I first ate these Apple Dumplings at a friend's house and they are so good and so easy! I ate mine with a scoop of vanilla ice cream, but would also be good without it. I am sure peaches or any other fruit would be yummy too! Enjoy!

Ingredients:

2 cans crescent rolls
1 cup butter
1 cup sugar
2 Granny Smith apples
1 teaspoon vanilla extract
Cinnamon, to sprinkle
1 can Mountain Dew

Cut peeled and cored apples into 8 slices each.
Place each slice of apple on a crescent roll and roll up.
Put each dumpling in a buttered 9-inch x 13-inch baking pan.
Next melt the butter; add sugar, barely mix.
Add the vanilla extract and stir.
Pour sugar-butter mixture over top of the apple dumplings.
Pour Mountain Dew around the edges of the dumplings, not on top of them.
On top of dumplings sprinkle the cinnamon.
Bake in 350 degree oven for 40 minutes.

Now how easy was that for Apple Dumplings!

Perfectly Dipped Chocolate Strawberries!

A very dear friend of mine, Susan ask me for a recipe for Dipped Chocolate Strawberries. You could use any flavor you like to dip them in from semi-sweet chocolate, milk chocolate to white chocolate. Pick you favorite for a perfectly dipped strawberry for Valentine's Day. Let the love flow! Enjoy!

To get started make sure you have all these ingredients on hand:

2 pints strawberries (with stems if you can find them)
1 ½ cups semi-sweet chocolate chips (or whatever you prefer)
2 tablespoons corn syrup
6 tablespoons butter

Now let get read to make us some Perfectly Dipped Chocolate Strawberries:

You will need to wash your strawberries and dry them with paper towels or cloth; make sure they are very dry.
If the strawberries have been refrigerated, let them get to room temperature before dipping.
In a double boiler, add chocolate chips, corn syrup and butter, melt on medium heat, occasionally stirring.
After it is melted, remove from the heat, dip 2/3 of strawberry in chocolate, let drip for a few seconds.
Place the strawberries on sheet pan covered with wax paper or use the method under the tips.
Put the dipped strawberries in refrigerator until they are firm, about 20 minutes.

Tips:

Make sure the strawberries are dry before dipping!
To have perfectly dipped strawberries, in the stem end of the strawberry stick a toothpick, dip in the chocolate, let drip. Then stick toothpick in a block of Styrofoam to let the chocolate dry. Now you have a perfect dipped strawberry!
You can also melt the chocolate, syrup and butter in the microwave using a microwave safe bowl. Check to see if the chocolate is melted every 7 seconds, do not over do!
