|Green Velvet Cupcakes Recipe!|
I know you have heard of the Red Velvet Cupcakes, this is a recipe for Green Velvet Cupcakes. It is moist and delicious top with a cream cheese frosting. Would be great for St. Patrick's Day or around the Christmas holidays. You could also make a cake or whoppie pies with this recipe.
Check to make sure you have all these ingredients before starting.
2 ½ cups flour
2 cup sugar
1 tablespoon cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 cup oil
1 cup buttermilk (if do not have this, see note below)
1 tablespoon vinegar
1 teaspoon vanilla extract
1 ounce green food coloring ( I know some folks do like using this much food coloring but if you want it green you must)
Preheat oven to 350 degrees.
Measure in a large mixing bowl; sugar, cocoa powder, flour, salt, baking soda
Grease your muffin tins, cake pans or whoopie pie pans, whichever you are using.
In a medium bowl, add eggs and whisk; add oil, buttermilk, vinegar, vanilla extract, and green food coloring.
Add liquids into dry ingredients.
Beat for 2 minutes at medium-high speed.
Bake at 350 degree for about 16 minutes for cupcakes, for 8-inch cake pans about 22 minutes and whoopie pie pans about 13 minutes.
Let cupcake cool in pan 15 minutes.
When completely cool frost with canned or homemade cream cheese frosting.
To make your own buttermilk, take one scant cup milk and add either 1 tablespoon of lemon juice or white vinegar. Stir; wait 5-10 minutes it will be slightly thicken, but not as thick as the buttermilk you buy in the store.
Cream Cheese Frosting
1-8-ounce package cream cheese, softened
¼ cup butter, softened
1 teaspoon vanilla
1-2-pound bag powdered sugar
Milk as needed
Beat with electric mixer cream cheese, butter and vanilla; slowly add powdered sugar.
Add milk until it reaches the thickness you like.
