Apple Spice Muffins are spicy moist muffin. They would be great to serve with Sausage and Cheese Breakfast Bread Pudding for breakfast or brunch. They would also freeze well. Enjoy!
Here are ingredients you will need:
2 cups applesauce
4 cups all-purpose flour
1 cup butter or margarine
1 ½ cups raisins (most of you know I do not like raisins, so this is for your raisin lovers)
1 ½ cups pecans, chopped
2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon vanilla extract
Now to get them ready for the oven:
Preheat oven to 350 degree.
Cream butter and sugar.
Add eggs and vanilla extract; mix well.
Mix flour, nutmeg, cinnamon, allspice and baking soda.
Stir in flour mixture alternately with applesauce.
Fold in nuts and raisins.
Fill paper-lined muffin cups ¾ full with batter.
If desire you can sprinkle tops of muffins with a cinnamon-sugar mixture.
Bake at 350 for 20 to 25 minutes.
Makes about 2 dozen muffins.
