Coco Cola Cake Recipe

Coca Cola Cake


This cake is made scrumptious with coca cola and miniature marshmallows. How good does that sound? I love chocolate and coca cola so what a yummy combination in a cake.

Ingredients needed:

1 cup butter, softened


2 cups flour


1 ¾ cups sugar


3 tablespoons unsweetened cocoa


1 teaspoon baking soda


1 teaspoon vanilla extract


2 eggs


½ cup buttermilk


1 cup coca cola


1 ½ cup miniature marshmallows


1 ½ cups toasted pecans, chopped

Let's get to cooking:

Combine all ingredients except coca cola and marshmallows in a large mixing bowl.


Blend at low speed with electric mixer , beat one minute at medium speed.
Add coca cola, blend well.


Stir in marshmallows by hand.



Pour into greased and floured 13-inch x 9-inch and bake at 350 degree for 40 to 45 minutes.


Cool 30 minutes and ice with coca cola icing.

Coca Cola Icing:

Combine in a small mixing bowl:

½ cup butter, softened


3 tablespoons unsweetened cocoa


1/3 cup coca cola


4 cups powdered sugar (I like to sift mine to get lumps out)


Stir in 1 ½ cups toasted pecans, chopped 



Directions for making Frosting:

Step 1: In a small saucepan, combine the cream or milk, margarine and cocoa; heat until the butter melts.

Step 2: Beat in the Confectioners sugar and chopped pecans.

Step 3: Spread frosting on the hot cake.

Step 4: Cool cake and cut.

Yields: 24 servings.


Tips:
You may use another type of nuts if you prefer.


Warning:

Must have a glass of cold milk to drink with cake!
